Susie’s “Bush Rumbles” Recipe
Wattle seed, Lemon Myrtle & Macadamia
1 cup shredded/grated coconut
1 Pkt Arrowroot biscuits – crushed (or Marie or Shortbread)
1-2 tablespoon fine Wattle seed (I use Outback chef)
1 tin sweetened condensed milk (or a healthier alternative?)
2 teaspoons Lemon Myrtle leaf (finely chopped) or essence
About half cup of chopped Macadamias
Extra coconut for rolling
Optional Dried fruit: Add half cup Quandong or Muntry Berries
Optional White Chocolate drops: Add 3 tablespoons, chopped.
1. Crush biscuits well (with a rolling pin or vitamiser)
2. Combine dry ingredients in a bowl – mix well
3. Add condensed milk – mix well until sticking together
4. Spoon our mixture and shape and roll into small balls
5. Roll balls around in coconut to cover.
6. Store in fridge for a few hours.
